I was feeling uninspired about what to make for dinner the other day, until the idea of Sloppy Joes popped into my head. Not sure why, since I haven’t had one since I was a kid… They were a big hit, though. And so easy to make!
Most sauce recipes I found call for all ketchup as the base, but I subbed in half tomato puree so that I could control the flavor a bit more. I’ve also tried a version that was 75% tomato puree, which also turned out well – you just need to adjust the other seasonings.
One of the best parts of this recipe – besides being really quick – is that you can customize it to your taste.

Sloppy Joes
Half an onion, diced (about 1/2 cup)
1 lb ground beef
1/2 cup ketchup
1/2 cup tomato puree
1 tbsp apple cider vinegar
1 tbsp brown sugar
1 tsp powdered mustard
1 tsp garlic powder
1/2 tsp chili powder
Saute onion in a bit of oil until just beginning to soften and brown. Add beef and cook until browned. If needed, remove some of the fat from the pan.
Whisk together the remaining ingredients, then add. Stir and simmer for a few minutes.
